On busy days, when I do not have much time for meal preparation, I love recipes like this one. It is so simple and easy yet so full of flavor. My family loves it when I make these. This recipe was inspired by my desire to duplicate Taco Bell’s steak and cheese quesadilla, that I am quite fond of. These quesadillas are so versatile and so easy to make. Sometimes, I add black beans, onion, chilli peppers, etc. Whatever your fancy, I promise you that this recipe will not disappoint!
1 lb. steak (flank steak is best, I used round steak or you can substitute boneless skinless chicken breast)
3 c. shredded Mexican cheese
1 package taco seasoning
1 bag of extra large flour tortillas
1/2 c. of sour cream
*vegetable oil in the bottom of your frying pan (use your oil sparingly, as it can cause the tortilla to brown and burn faster).
Slice steak very thin into bite size pieces that will cook quickly. Pour all of the ingredients into a bowl and stir completely. Place a couple of large spoonfuls onto one half of the tortilla and spread to completely cover one half of the tortilla. Fold tortilla in half and place in a frying pan with a little vegetable oil in it. Cook over low medium heat. Cover for three to four minutes until the steak is cooked thoroughly keeping a close eye on it and turning it over once. Brown on each side until the tortilla is crisp. Eat and enjoy!
