DOUBLE DIPPED CHICKEN STRIPS

INGREDIENTS:

1 lb. boneless skinless chicken breast

1 c. flour

2 t. garlic powder

1 t. black pepper

1 t. paprika

1/2 t. salt

1 t. garlic salt

2 eggs beaten

vegetable oil for frying pan

DIRECTIONS:

Preheat your oil to 350 degrees.  I use an extra large 15 inch 7 quart electric skillet for the ease of keeping the oil at a constant temp. and I can fry many pieces at the same time.  Slice the chicken breasts into long thin strips about 1/2 inch thick.  Cut them going with the grain of the meat.  Combine all of your dry ingredients together in a bowl.  Whip the eggs in a separate bowl.  Dip the chicken pieces into the egg, then dredge in the flour mixture and repeat. Once the chicken is well coated place them into the hot oil.  Depending on the thickness of your strips will depend on how long you have to fry them.  Mine took about ten minutes total.  Turn them over once during the frying time.  Dry them on paper towels or napkins to absorb the extra oil.  I like mine served with sweet and sour sauce but the kids prefer ranch dressing or bbq sauce.  Hope you enjoy them.
