DARK AS NIGHT MARASCHINO CHERRY DELIGHT ICE CREAM

As women, we all experience those nagging insufferable cravings that won’t stop until we feed that inner beast!  We feel the need for something sweet, salty or both!  Then there is CHOCOLATE, which is in a category entirely it’s own!  I don’t know about you but if I don’t have chocolate when my body needs it, everyone is going to suffer around me!  If Mamma ain’t happy, ain’t nobody happy!

Well, I was needing to satisfy my own chocolate cravings (before things got ugly….okay before I got ugly) when I began putting together this ice cream recipe.  What I came up with was a rich, dark chocolaty ice cream, sweet and satisfying, and bursting with cherry flavor!  These flavors are reminiscent of opening a beautiful box of those incredibly  satisfying chocolate covered cherries that make great Christmas gifts.

This ice cream is a combination of Hershey’s Special dark cocoa powder, Godiva’s Milk Chocolate pudding, Nestle’s mini chocolate chips, Maraschino cherries and cherry juice.  The cocoa powder and chocolate pudding combine together to form a deep dark chocolaty abyss and the cherries add a sweetness and a pleasant texture.  This ice cream has temporarily quieted my inner beast!

INGREDIENTS:

15 tablespoons Hershey’s Special Dark Cocoa Powder

1 package Godiva Milk Chocolate Pudding

1 c. Maraschino Cherry juice

1/3 c. hot water

2 c. milk

1 c. sugar

Add:

4 cups of heavy cream

2-3 t. cherry extract

3/4-1 t. almond extract

1-1/2 cups Maraschino cherries, chopped

1/2 – 3/4 cup of Nestle’s mini chocolate chips

DIRECTIONS:

Mix together the first 6 ingredients in a medium sauce pan.  Cook over low medium heat until all the ingredients are blended well without any clumps.  Refrigerate the mixture until it is completely cooled, about one hour in the refrigerator.  Add the remaining ingredients with the exception of the chips and cherries.  Add them after the ice cream has finished churning.  The mixture gets thicker after being frozen over night.
